I've been a loyal customer of Wally's and sons for multiple years never having an issue until now. Long story hopefully short the office staff has become rude and unprofessional. I've brought hogs into this establishment DOA for over 5 years never had an issue until now. Tracy told me and I quote "we don't do dead hogs here ever. " Essentially calling me a liar after explaining to her I've already spoken to The owner himself and has never been an issue in the last 5 years she then proceeded to tell me that my date I had booked over two months ago would not be available I would have to come even later that it was too hot to butcher pigs that their freezers are broken their chain hoist is on back order and a few other excuses I just don't care to mention. spoke to the owner after he asked me what my issues were he then proceeded to speak over me the entire conversation until I finally had enough and asked him would you actually like me to answer you or you just going to keep talking over me this entire time. I am not sure what has happened to this establishment but I would not trust them to butcher a chicken for me at this time. This is quite sad all these years their food has been amazingly seasoned and prepared but the last year or two something has changed.

We tried Wally and Sons for the first time with our steer this year. We dropped off our steer October 4 and it was finally finished Nov 21st. When we picked it up we expected to get approximately 400 pounds of meat (standard 35% loss from hanging weight of 638) we expected this to take up our entire freezer (21 cubic feet). That was not the case. It was so much less it made me WEIGH every single package because I knew it wasn’t even close. After weighing every single package we ended up with 269.04 pounds of meat from a hanging weight of 638 pounds! We didn’t even receive 50% of that! Now when I finished weighing it we thought that maybe some meat had been shuffled in the freezer and we were simply missing boxes. We attempted to call on Tuesday and no one answered. Due to the holiday we waited until today and finally spoke with the owner and his response…
We are liars. We received every bit of our meat. That was his answer… we are liars. That is shameful and I will make sure that every single person that ever asks for a recommendation knows what happened. We tried to call this man 2 hours after we got that meat we tried to give the benefit of the doubt and in return we were called LIARS. So IF we received ALL of our meat and we are just liars, and you decide to use this butcher, please expect a 60% loss of meat. I won’t call this man a liar, I don’t know him. I will say that we are incredibly disappointed that we lost more than 100 pounds of meat that belonged to us. I do NOT recommend this business!

Dropped 2 hogs of wally did a great job and turn around was about 2 and a half weeks bacon is great smoked sausage is great and breakfast sausage is also great cuts are as promised and packaged great. 10 out of 10 experience wally is fantastic and will be back for all my processing needs.

If you are looking for an honest butcher, look somewhere else.

We bought 1/2 a steer. Hanging weight was 373 pounds. The agreed price with the family that raised the steer was $5.50/pound. We paid them, not Wally and Sons.

Here's where Wally and Sons stole meat from us.

We expected to get about 60% of that hanging weight in beef. We got about 45%. We were given 179 pounds.

How can it be that we got NO filet mignons? None. I understand that if we'd gotten porterhouse the filets would be part of those. Nope, we didn't get any porterhouse steaks either. They more than likely took all the best cuts for themselves.

Here's what we received:
73 lbs hamburger
14 lbs cube steak
14.2 lbs stew meat
16 lbs T-bone
6.8 lbs sirloin tip roast
4.8 lbs brisket
4.2 lbs rump roast
13.6 lbs sirloin steaks
12.6 lbs ribs
20.6 lbs chuck roast

Net cost: $11.41 per pound.

Tried two different times to get a hog processed here. Each time the person answering the phone was extremely rude. The first time I thought, well everyone has a bad day. But this time was the same thing. Not going to try again. I wouldn't even give the one star if I could post this without it!!!

These people are rude and somewhat confrontational on the phone. I don't know what has happened but doesn't seem that they like thier job anymore. Never calling them again! There are other people around, you're not the only processor in town.
